Mexican Deviled Eggs

South of the border style deviled eggs. Spicy hot mixture of jalapeno and chili powder mixed with egg yolks, cumin, capers, mustard, and mayonnaise. Jalapeno mixture spooned or piped back into egg white halves and garnished with finely diced cilantro.
Ingredients -
12 Hard-Cooked Eggs, peeled, cut lengthwise into halves
1/4 cup Mayonnaise
1 Jalapeno Pepper, seeded and finely chopped
1 tablespoon finely chopped Capers
1 tablespoon Ground Cumin
1 tablespoon prepared Mustard
1/2 teaspoon Salt
Chili Powder
snipped Cilantro
 
Preparation:

1. Carefully remove yolks from egg white halves and place yolks in small bowl.

2. Mash yolks with fork. Add mayonnaise, jalapeno pepper, capers, cumin, mustard and salt.

3. Stir until smooth.

4. Spoon Mexican deviled egg mixture into egg white halves.

5. Sprinkle deviled eggs with chili powder.

6. Garnish with snipped cilantro.

Jalapeno Pepper
For more or less heat, vary the amount of finely chopped jalapeno pepper. You could use an anaheim or poblano pepper for less heat, or a serrano or cayenne pepper for more heat.

Hard Cooked Eggs
Hard cooked eggs should be left unpeeled and refrigerated if they will not be used immediately.
